HOGSHEAD - 2 & 3 Year Seasoned A.Stiller Fine Grain is a selection of Northern USA forests, chosen for their unique style and softer flavour profile. The Fine Grain timber is seasoned in Pennsylvania, with its high rainfall, leaching qualities, and overall consistency. This producing a premium example of American Oak, and a Barrel which is both elegant and complimentary to a varitety of fruit profiles. RECOMMENDATIONS Fire Bent
The traditional fire bent barrel helps to provide a hightened stucture while maintaining elegance. This method is suitable for all styles and varietals. Water Bent - The technique of hot water bending subdues the tannin and aromatics of the wood, and will help to provide texture and length without overpowering the natural fruit. This softer tannin impact was traditionally, and is often used for white wine, but is now a popular style for red wine maturation where a softer, elegant profile is desired.

FRENCH OAK: LEROI MID FINE GRAIN TOAST LEVELS M/ ML/ M+/B BARRIQUE HOGSHEAD PUNCHEON With twelve master coopers, LEROI Produces 12,000 barrels per annum and has developed a wine barrel portfolio with a focus on quality wood seasoned entirely at the cooperage. Seasoning of wood in Cognac takes on a very dark complexion compared to wood seasoned elsewhere; this is due to increased mycelium levels in the air that exist from the evaporation of Cognac from the surrounding Cognac Houses. This gives the wood a different character which typifies the traditional Cognac barrel style imparting a unique complexity to the wine. RECOMMENDATIONS Great for adding aromatic punch and volume to barrel fermented Chardonnay, and for providing excellend structural support with balanced oak and toast characters to Syrah. Shiraz, Cabernet, Merlot, Malbec, and Tempranillo. Medium Toast - Allows the fruit to dominate while giving aromatic complexity with vanilla and hazelnut notes. The palate contributes pastry-like characters with silky structural tannins. Suited to Chardonnay, Cabernet, Merlot, Malbec, and Tempranillo. Medium Plus Toast -
As the toasting increases, roasted and spice notes dominate with increased sweetness and softer tannin evolution. Recommended for Chardonnay, Syrah/ Shiraz, Merlot, and Grenache. Medium-Long Toast
Toasted for longer and with lower flame intensity, Medium-Long delivers a top choice for enhancing fruit aromatics, texture and length while contributing a very subtle toast profile of mild spice nuances and wood flavours. Burgundy -
The Burgundian toast brings more roasted and smoked aromas, with a dark sweet and savoury profile giving more volume to the palate. Recommended for Chardonnay, Pinot Nior, and Syrah/ Shiraz.
